Woman Places in 4th Annual
Farm Bureau Strawberry Recipe Contest

Moore’s recipe for “Strawberry-Coconut Chocolate Cake” won
second place in the statewide Fourth Annual SC Farm Bureau
Roadside Market Strawberry Recipe Contest held recently in
Cayce. Moore, sponsored by McLeod Farms in McBee, SC,
received a $75 cash prize. McLeod Farms has placed in the
statewide strawberry contest every year since the contest’s
inception. The statewide competition featured winners of
similar contests at each of the participating roadside
markets.
The
winning recipe was for “Strawberry Lover’s No-Bake
Cheesecake” by Denise Birt sponsored by The Farmer’s Shed in
Lexington. She received a $150 cash prize for her “berry”
good recipe. This is the second consecutive year The
Farmer’s Shed strawberries and recipe have earned first
place in the contest.
Director
of Farm Bureau’s Roadside Market Program, Chalmers Mikell,
said, “This is a great way to get all of our Certified
Roadside Markets involved in a statewide effort. It pulls in
their customers on the local level and provides additional
exposure to the availability of locally grown fresh fruits
and vegetables.”
The 2007
Strawberry Recipe Contest was judged by Richard Mikell of
Carolina Adventure, Katie Kline of Congaree State Bank, and
Howard Jarrett of the restaurant Terra.
Despite
the severe reduction of the peach crop by this year’s Easter
freeze, Farm Bureau still plans to hold its 4th
Annual Roadside Market Peach Recipe Contest later this
summer. Details of the local and statewide contests may be
found at any Farm Bureau Certified Roadside Market around
the state.

2007 SC Farm Bureau Certified
Roadside Market Strawberry Recipe Contest
Strawberry
Lovers No-Bake Cheese Cake
Crust
1 1/2 cups graham cracker
crumbs
1/2 cup chopped pecans
1/2 cup granulated sugar
6 tablespoons margarine, melted
3 (l-ounce) squares semi-sweet baking chocolate
1 1/2 tablespoons butter
Preheat oven to 350°. Add
sugar, margarine and pecans to graham cracker crumbs. Press
into bottom and sides of a 9" spring-form pan that has been
sprayed with non-stick cooking spray. Bake 15 minutes. Cool
completely. Melt chocolate and butter together. Spread or
brush over bottom and up sides of crust. Chill.
Filling
2 (8-ounce) blocks cream
cheese, softened
1 (14-ounce) can sweetened condensed milk
1/2 cup heavy whipping cream
1 (3.4-0unce) package white chocolate flavored instant
pudding mix
1 (3-ounce) package strawberry flavored gelatin
1/2 (8-ounce) container strawberry flavored Cool Whip®
Beat cream cheese until smooth.
Add condensed milk, whipping cream, pudding mix and gelatin.
Mix well. Fold in whipped topping, stirring gently until
blended. Pour mixture into crust. Refrigerate until set.
Remove rim and plate. Carefully transfer to serving platter.
Strawberry Cream Cheese
Icing
1/2 (8-ounce) block cream
cheese, softened
4 tablespoons margarine, softened
2 cups powdered sugar
1 1/2 teaspoons strawberry flavoring
Mix together until smooth.
Spread over filling.
Topping3
cups fresh whole strawberries, hulled
1 (13.5-ounce) container
strawberry glaze
2 (l-ounce) squares semi-sweet baking chocolate
1 tablespoon butter
Arrange strawberries over
icing, pressing down lightly. Spoon glaze over strawberries,
covering entire top of cheesecake. Melt chocolate and
butter. Drizzle over strawberries and down sides of crust.
Refrigerate. |
